It occurred to me that we were overlooking musical inspiration, so here are two quick albums. Anyone with good artists, albums or songs is more than welcome to share here.
1. Rogue's Gallery: Pirate Ballads, Sea Songs, and Chanteys
2. Son of a Rogue's Gallery: Pirate Ballads, Sea Songs and Chanteys
These are compilation albums comprised of artists from various genres performing sea shanties and ballads. The roster will surprise you: Sting, Bono, Akron/Family, Lou Reed, Frank Zappa & the Mothers of Invention, Michael Stipe & Courtney Love, Robyn Hitchcock, Beth Orton, Tom Waits w/ Keith Richards, Iggy Pop w/ A Hawk and a Hacksaw, Macy Gray... all in all, very interesting listening.

Some song to go with your drink, sir?
(lyrics by Ben Woerner with some edits from me)
To Numa’s coast we are bound, me boys,
'Weigh me boys, to Numa!
To sink Comp’ny ships, don’t ya’ make no noise
Running down to Numa.
(Chorus)
Weigh, me boys, to Numa!
Running down to Numa.
The captain he will trim the sails,
Weigh, me boys, to Numa!
Winging the water up’t’ver the rails,
Running down to Numa.
(Chorus)
Bosun’s a Vendal, he's nine feet tall,
Weigh, me boys, to Numa!
Sleeps in the galley with his feet in the hall.
Running down to Numa.
(Chorus)
Castillian girls can dance the ‘dango,
Weigh, me boys, to Numa!
Round as a melon and sweet as a mango,
Running down to Numa.
(Chorus)
Running down to Numa with a load of iron,
Weigh me boys, to Numa!
Long guns ‘ill speak, and we’ll leave them t’on fire
Running down to Numa.
(Chorus)
Un’load this iron and home-ward go,
Weigh, me boys, to Numa!
Mister mate, he told me so,
Running down to Numa.
(Chorus)

With that reminder:
3. Assassin's Creed 4: Black Flag (Sea Shanty Edition)
4. Assassin's Creed 4: Black Flag (Sea Shanty Edition, Vol. 2)
Forty one sea shanties from our other favorite game about pirates...
5. Assassin's Creed Rogue (Sea Shanty Edition)
And twenty four more from a game we should have paid attention to but likely didn't...

They are very cliché but I tend to put them on any 7th Sea music list, especially for background music for silly oneshots.

Bumping the thread to add that this is the last weekend to listen to the recordings of the 37th Annual Sea Music Festival (June 9-12, 2016). The Festival was recorded live on WPKN and the broadcasts are still available on-line at: http://www.wpkn.org/
and here's a specific link to the first concert:
http://archives.wpkn.org/bookmarks/listen/149437/sea-music-festival-special-live-broadcast-from-mystic-seaport
Thursday's concert will disappear from the archives tomorrow, etc. The Sunday concert featuring all performers was not broadcast.
Please note: In this festival, 'sea music' is defined broadly and covers any era up to the present day. Working shanties, which for the English language seem to appear around 1830, are strongly featured, but so are many other types of 'sea music'.
When you listen, please keep in mind that for many of these songs, the majority of the audience, many of them trained singers and musicians, were singing loudly along in the choruses. So, in your imagination, add ~200 voices. ;)
Went ahead and added most of what you people shared here in a playlit in spotify (except alestrom, not my cup of tea...)...
Added a few other bits as well...

Personally, I found the soundtrack for the 1998 film The Mask of Zorro to be a great inspiration for Castillain-centric characters and adventures, with The Fencing Lesson (https://www.youtube.com/watch?v=tzxzbfowz8s) being one of my favorites.
The Princess Bride soundtrack is another good one IMHO, with The Swordfight (https://www.youtube.com/watch?v=Q_Zr5KpJ2tA) being especially good background music when either working on a fight scene or having the PCs engaged in such.
The soundtrack for the first PotC flick is okay, but I'm a bit more partial to the one for Stranger Tides (4th one in the franchise), though hard to argue with the general catchiness of He's a Pirate (KH2 ReMix version is a nice take; https://www.youtube.com/watch?v=xjLtEqY8jKw) making it good for when the Heroes are doing crazy stunts during a sequence, though Angelica's theme (https://www.youtube.com/watch?v=a8DCWrhn4N0) from Stranger Tides isn't bad, again well suited for anything with Castillian influences.
